Struggled to find bread improver as no retailer knew what I was talking about. Rang manufacture - vit C!!! In the meantime used recipe book for my worn out Russell Hobbs (fab while it lasted yet poor design of rotating 'hub' meant it wore out quickly). Good bread, yet not great, as difficult to convert quantities. Have just made first loaf, without bread improver, a 1x1kg multi grain and it's amazing. Never experienced quite such a tall loaf. Goodness knows what will happen if I do the next size up!! Cooling as I write.
I thought the recipe book could do with a test run from a non professional. Fortunately I had an American 'cup' to measure my mixed grains, easy to use just any old cup - a weight would be more reliable.
Early days, yet looking forward to testing out other recipes.
Be on the alert for tinned yeast that can only be used for hand baking - a complete disaster in a breadmaker and not obvious.
After producing loaves of unpredictable quality, despite careful measurement, and having to restart programmes every time there was a blip in the power supply, I have finally acquired a product which gives consistent good loaves time after time. I use it almost daily, mostly for wholemeal loaves, as I never buy bread.
there are not many things we have in our houses that when they wear out we want to replace them with an identical unit, but this is the second breadmaker of this type that we have bought its used every day sometimes twice,we make piza bases and use the machine to mix and rise dough to be transfered to our own shape tins to bake for special occasions.it bakes a good size loaf.on the down side if used overnight it can be a bit noisy waking us up if the kitchen door is not closed. a good hassle free machine . dont be afraid to take libertys with the recipies to get the bread how you like it, low salt etc...we would not be without one.
I mainly use this to make the dough, with ocassional baking. Simple and easy to use a top quality product

Although, the first few loaves were a bit disappointed in terms of consistency, the breadmaker seems to settle after the fifth one. Since then, the shape and taste of bread are excellent. We had a cheaper (not 'professional') Breville before that, but one can honestly not tell the difference. The nut dispenser is a nice feature to have for raisins and chipped-chocolate type breads. Whilst running, the breadmaker is a bit noisy but nothing alarming. The overall build quality is good with easy to use menus although the inside and the kneading pan seem a bit fragile. Time will tell as it was also the weak point of our previous Breville.The bread guide supplied with the machine is a bit of a gimmick and I think that the contribution of Thompson is only his name as one should not expect much guidance and fancy bread recipes.[...]
